So while I was in China, I rediscovered my fondness for [tag]sweet potato[/tag]es.¬ I started coming up with harebrained ideas to introduce the mobile carts that you see in winter to the UChicago quad, even.¬ I gave up on that when I started thinking about how long it would take to break even if I were to actually do it, and how little I’d have to value my time in addition.¬ (This isn’t to imply that I don’t already value my time very little, just… not that little.)
So instead I’ve simply taken to baking up a bunch and eating them when I’m hungry, as a snack.¬ Apparently they’re actually a pretty good snack option, because they have a very low glycemic index, and moreover, they’re full of healthy things as vegetables often are.¬ But, as I was chomping down earlier, I remembered hearing stories about people who ate too many carrots and turned orange.
Thinking this might be a most unfortunate outcome, I first checked to see if sweet potatoes have a bunch of beta carotene, which they do.¬ Following this, I started trying to figure out how much intake I’d have to be up to in order to be at risk for turning orange.¬ I came across the title line in this article.¬ It’s actually a fucking ton of carrots one has to eat to turn orange.¬ Moreover, apparently for some people, they’re addictive?
I don’t know, the article itself is pretty hilarous actually, and I can rest easy knowing that I can continue eating these delicious potatoes without fear of turning orange.

dude, i had a couple of sweet potatoes rotting away in your fridge and nobody ate them! though that was last year.. and i guess, no one really eats the stuff i leave in there anyway. it just all eventually gets thrown out unless i get to it first. oh well.
but yeah, sweet, easy and delicious. and aluminum foil costs pennies.
